kinja is really fucking up here so I’m gonna post and see if it’s actually duplicating images
this pan was loaded with sliced onions and it took a long time to get here. The onions are sweet enough that I stopped it not too long after the last photo. I also didn’t want to check them anymore.
These caramelized onions will be included or accompanying many dishes for the next week or so.
EDIT: I am not cleaning up kinja’s shit, fuck that, I’m leaving this up as a testament to the weird shit it does. I pasted each image once and this was the result.

I really like onions, but at some point they started to really fuck with my digestion so now I have to either use small amounts or cook the shit out of them. For example, when I make stew or chowder or pot roast in the crock pot, I brown the onions in a skillet with whatever else I need to fry/brown before throwing in the pot.

I know people who react the same way to onions.
I’d imagine with the stuff I cooked you’d be okay since they’re slow cooked in a pan for a while. They don’t even taste like onions anymore because the end result is so sweet.

I make french onion soup a couple times a year. Those look great. It's always an expensive endeavor, it's the only time I have good port or gyuere around.

Right there with you. I diced and browned some onions and garlic for chili last weekend, and had to warn that if things weren’t sped up with the chili pretty quickly, that bowl was gonna be in my belly.

I love onions too , but some years back, raw onions began to not love me. Gotta cook ‘em at least slightly (or pickle them), or they give me agonizing indigestion. And even a tiny bit of raw onion messes me up, so I’ve got to be vigilant in picking them out of things.
